Question: How long would chopped veggies last in a tupperware container?

I love eating omelets loaded with veggies, but hate cutting the veggies every time I eat one. If I was to take a big Tupperware container and chop up a ton of fresh veggies (Like peppers, onions, mushrooms, etc.) and refrigerate, how long could I expect them to stay fresh?

Answer: You can keep them in a container for well over a week. However, I have a suggestion ... I'm a vegetarian so I often need a great number of veggies on hand, ready to roll ... I blanch veggies (this process only takes about 3 minutes, tops), chop them up in the size I prefer for my omelets and other common meals, toss them into a ziploc freezer bag, press out the air and toss them in the fridge. When I'm about to make my breakfast, I pour out the amount I need, put them in a strainer and run them under hot water until they are thawed (or microwave for a minute, then strain) and toss them into the mix.
